Chef Eric Maczko takes you on an adventure to discover Napa Valley through its cuisine. He focuses on the relationship between food and wine with seasonal dishes and emphasizes techniques that allow the ingredients to shine. The upcoming harvest months will focus on creating dishes to pair perfectly with Pine Ridge wines. September's seminar will focus on creating a recipe using glazed Cassis mission figs, heirloom tomatoes with mozzarella tart and a grilled porcini crusted lamb loin with ratatouille from the Pine Ridge garden. Learn how to create these dishes, enjoy them in the Estate Gardens and take the recipe with you as you head home.
Chef Eric grew up and honed his culinary career in New Jersey. He then ventured to the west coast where he graduated from the Culinary Institute of America. Eric has worked at Pine Ridge Winery as the Executive Winery Chef since 2001. He uses these culinary programs to educate people on the importance of using organic and local ingredients and also on the art of pairing food with wine.
